American, Sauce
3 cups canned crushed tomatoes
1 cup packed light brown sugar
1 cup cider vinegar
3/4 cup Worcestershire sauce
1/4 cup strong coffee
1/4 cup fresh orange juice
2 T fresh ginger, julienned
2 lemons, juiced
2 cloves garlic, minced
1 T dry mustard
1 T black pepper
1 T red pepper flakes
1. Combine all ingredients in a large saucepan over medium high heat.
2. Bring to a low boil, reduce heat to low and simmer 30 - 45 minutes, until the mixture has thickened and reduced by about one-quarter.
3. Use immediately or refrigerate in an airtight container until ready to use.
Seems to keep very well, and the flavors blend a little if allowed to sit for 3+ days.
Can replace chili flakes with two seeded red jalapenos. May also add some orange and lemon zest from the citrus for a brighter flavor.
